Apium Nodiflorum Other Names: Fool's Cress Growing: Grows best in part shade and moist conditions. Can tolerate and recover rapidly from dry spells. Grows well in wet soil, or in semi-submerged conditions such as pond edges. Lebanese Cress makes a great addition to salads, adding a carrot & celery flavour. Terrific addition to sandwiches. It is also a fabulous garnish, when finely chopped.   When freshly picked, Lebanese cress is almost 90% water. What’s left, are some carbohydrates & protein along with very high levels of vitamin K, plus high vitamin C & A content.   Healthy Lebanese cress has a diverse mineral content, including manganese, potassium, magnesium and calcium.
